Chef Mark's Broccoli Salad
Serves 12
1/2 cup dried apricots sliced thin
1/2 cup raisins
1/2 cup sunflower seeds
1/4 cup rice wine vinegar
1/4 cup sunflower oil or extra virgin olive oil
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper2 heads of broccoli cut down into small florets (peel the stem and slice into the salad as well. Chef Mark doesn't let anything go to waste!)
1 bunch of green onions finely chopped
1 red bell pepper diced
1 yellow bell pepper diced
- Place apricots, raisins, sunflower seeds, vinegar, oil and spices together in a mixing bowl and stir.
- Add broccoli, peppers and green onions.
- Mix well and serve.
